Eggless Sweet Potato Omelette

Ingredients:
2 medium Sweet Potato
2 tbsp coconut oil
1 tsp cumin seeds
1 chopped red onion
2 garlic cloves (chopped or grated)
2 tbsp rice flour or wheat flour
1 tbsp cornflour
2 chunks of tofu
Optional: ½ green chili (finely chopped)

Instructions:
Grate the sweet potato into a bowl
Melt the coconut oil in a medium pan on low heat
Cook the cumin seeds in the pan till the seeds are slightly brown (should take a min or so)
Add the onions to the plan and stir till the onions become slightly brown
Add the garlic & green chili
Stir lightly. Add grated sweet potato, rice flour, corn flour & tofu pieces
Stir everything and let it cook on medium heat for a couple of minutes
Now, melt 0.5 tbsp coconut oil in a small pan on low heat. Add half the sweet potato mixture in this pan and spread the batter to the sides.
Let the omelet cook on the pan for about 5-7 minutes and then flip it!
Add coconut oil on the sides of the omelet and cook it till brown
Add it to a plate & Enjoy with a toast!
