Eggless Sweet Potato Omelette

Ingredients:

  • 2 medium Sweet Potato

  • 2 tbsp coconut oil

  • 1 tsp cumin seeds

  • 1 chopped red onion

  • 2 garlic cloves (chopped or grated)

  • 2 tbsp rice flour or wheat flour

  • 1 tbsp cornflour

  • 2 chunks of tofu

  • Optional: ½ green chili (finely chopped)




Instructions:

  1. Grate the sweet potato into a bowl

  2. Melt the coconut oil in a medium pan on low heat

  3. Cook the cumin seeds in the pan till the seeds are slightly brown (should take a min or so)

  4. Add the onions to the plan and stir till the onions become slightly brown

  5. Add the garlic & green chili

  6. Stir lightly. Add grated sweet potato, rice flour, corn flour & tofu pieces

  7. Stir everything and let it cook on medium heat for a couple of minutes

  8. Now, melt 0.5 tbsp coconut oil in a small pan on low heat. Add half the sweet potato mixture in this pan and spread the batter to the sides.

  9. Let the omelet cook on the pan for about 5-7 minutes and then flip it!

  10. Add coconut oil on the sides of the omelet and cook it till brown

  11. Add it to a plate & Enjoy with a toast!
