200 Calorie Tacos

As the festive season begins and parties and outings increase, so does our desire to eat yummy and delicious food at home as well.


I’ve had a soft spot for Mexican food since I moved to the US. We had this really good Mexican place on campus called Tin Lizzys and they served the best margaritas and tacos. Since I moved back to India, I forced my mom to experiment and find a healthy version of this recipe. She finally mastered it so I had to share it with you all.


And ofcourse, I’ve already added these 200 calorie tacos to my weekly dinner menu.



Ingredients

2 Whole wheat roti

1 bowl boiled black beans

2 tbsp raw white rice

1/4 red bell pepper, finely chopped

1/4 green bell pepper, finely chopped

1/4 yellow bell pepper, finely chopped

1/2 tomato

2 tbsp sour cream made from hung curd

Handful of cilantro

1/2 red onion, finely chopped

2 tbsp cottage cheese

1 lemon

1 tsp dried basil

1 tsp oregano

1 tsp chilli flakes

1 tsp mixed herbs

Salt & pepper to taste


Method


  1. Add oil to a pan and heat

  2. Once hot, add basil, oregano, chilli flakes and mixed herbs

  3. Toss in the bell peppers and tomatoes

  4. Once cooked, add in the boiled black beans

  5. In the meantime, prepare two whole wheat rotis/ tortilla

  6. Add the veggie and bean mix to the tortilla and then some rice

  7. Top it up with the sour cream prepared from home-made hung curd

  8. Top it with cilantro, spring onion, few drops of fresh lime juice and grated cottage cheese
