Easy, healthy & delicious Burrito Bowl

I've been a big fan of Mexican food due to its similarity with Indian food. When I was living in the US, I would always miss my raajma chawal and the one thing that came closest to it was the Chipotle Burrito bowl.
After I moved back to India and could enjoy raajma chawal and I started missing the Chipotle Burrito bowl that's why I came up with this healthy & nutritious burrito bowl idea. It's easy to make and makes for the perfect office lunch.

Ingredients
2 tbsp avocado oil
2 tbsp finely chopped red bell pepper
2 tbsp finely chopped yellow bell pepper
2 tbsp finely chopped green bell pepper
2 tbsp finely chopped red onion
4 tbsp sweet corn
1 cup boiled black beans
1 cup cubes of sweet potato (optional)
Oregano and salt for taste
For the green rice
1/2 avocado
1 cup loosely packed cilantro
1 lime
3 cloves garlic (optional)
1 cup brown or white rice
Methods
1.Prepare the rice in the pressure cooke
2. Blend the avocado, cilanto and lime in a blender till it forms a smooth creamy mix
3. Fold the rice in the mixture
4. In the meantime, cook the veggies in a pan with some olive oil or avocado oil
5. Once cooked, add in the black beans and then some oregano and salt
6. Layer the green creamy rice with the black bean and veggie mixture
7. Top it with cilantro and enjoy!
